Snowskin Mooncake Recipe // Resepi Snowskin Mooncake

As promised, here's the snowskin mooncake recipe.
Ingredients: (yields approx. 135g of dough)
50g kah fun flour (cooked glutinous flour)
40g icing sugar
15g shortening
1/4 cup cold milk/water (i used cold milk)
Directions:
1. Sift flour and icing sugar.
2. Add in shortening. Mix well until the mixture becomes like bread crumbs.
3. Make a well in the middle of the mixture then pour in the water. Knead the dough till soft and smooth.
4. Let the dough rest for about 15 minutes.
5. Dust working space with kah fun flour, and divide the dough to 20g/25g/30g depending on your mould or preferences. I was using a mini mould for a 50g mooncake.
6. Flatten the dough and put the filling in the middle. Wrap tightly.
7. Roll the dough ball over kah fun flour then press into mould.
8. Chill for few hours before serving.

Bahan-bahan: (menghasilkan 135g doh)

15g shortening/lemak sayuran
1/4 cawan susu sejuk/air sejuk
Cara-caranya:
1. Ayak bersama tepung dan gula aising.
2. Masukkan shortening. Gaulkan sehingga adunan menjadi seperta serbuk roti.
3. Masukkan air sedikit demi sedikit. Uli doh sehingga lembut dan licin.
4. Rehatkan doh selama 15 minit.
5. Bahagikan doh mengikut berat yang dikehendaki. Yang ni depends dengan saiz acuan. Macam saya, guna acuan mini. 25g doh, 25g pulak inti.
6. Ratakan doh dan masukkan inti di tengah-tengah. Balut dengan kemas.
7. Golekkan bebola doh dengan tepung kah fun dan masukkan ke dalam acuan.
8. Sejukkan beberapa jam sebelum dihidang.
My verdicts:
➤ The skin was quite sweet. Probably too sweet for some people. Well, it does suit my less-sweet custard fillings but if I were using the store bought fillings, I can't imagine the level of the sweetness. 😂
➤ Since this is my very first snowskin mooncake experience - both eating and making, I'm not sure if this is the right taste and texture.
➤ The texture was chewy but not as soft as mochi.

It's weekend!
I've been wanting to make my own snowskin mooncake since forever.
Traditional mooncake can be found easily at any supermarket but not the snowskin type.
So last weekend, we went out to town to get the ingredients for the mooncake and I ordered the mould and finally last night, I managed to commence my mooncake project.

I initially bought Pandan Mung Bean filling for the mooncake but as I searched the recipe through the internet, the pictures of custard filling mooncake made me drooling.
I omitted the store bought filling and decided to make the custard filling instead.
I will share the recipe of the custard filling first, while the recipe of the mooncake will be uploaded in the next post.
Ingredients:
1 egg yolk **the original recipe calls for 1 egg
1 tbsp sugar
1 tbsp custard powder
20g melted butter
25g cake flour
1/4 cup fresh milk
1/4 tsp condensed milk
Directions:
1. Sift flour and custard powder together.
2. Add in the sugar.
3. In another bowl, combine egg yolk, milk, condensed milk and butter then stir well.
4. Pour the wet ingredients into the dry ingredients and mix well.
5. Sieve the mixture into a steaming plate.
6. Steam for 8 minutes or until the mixture sets.
7. Knead the mixture until smooth.

Bahan-bahan:
1 biji kuning telur **resepi asal menggunakan 1 biji telur
1 sb gula
1 sb tepung kastard
20g mentega cair
25g tepung kek (saya guna 21g tepung gandum + 4g tepung jagung)
1/4 cawan susu (saya guna susu dutch lady low fat)
1/4 sk susu manis
Cara-caranya:
1. Ayak bersama tepung kek dan tepung kastard.
2. Masukkan gula.
3. Dalam bekas lain, satukan kuning telur, susu, susu manis dan mentega.
4. Satukan bahan basah bersama bahan kering dan gaul rata.
5. Tapis adunan ke dalam bekas tahan panas.
6. Kukus adunan selama 8 minit atas sehingga adunan masak.
7. Hancurkan adunan yang telah masak tadi dengan menggunakan garfu, kemudian uli sehingga licin.
My verdicts:
➤ As this was my first attempt, I'm not so sure if this is a good one.
➤ The custard filling was a little too firm. I supposed it was due to the egg as the original recipe calls for 1 whole egg but I use 1 egg yolk instead. Maybe, if more liquid were there in the batter and I followed the original recipe, the filling will be a little softer and smoother.
➤ Taste wise, okay. The custard taste was not too overwhelming and it was not too sweet.
➤ This recipe yields approx. 120g of the fillings.

I've been craving vanilla cupcake for daysssss.
I ran out of flour after I baked the banana cake so I was unable to get myself the vanilla cupcake immediately.
And finally today, I managed to bake again.
Muahahahhahahaha~
There are tons of vanilla cupcake recipes out there and the one that I tried was from Noopurskitchen.
Yielded 6 cupcakes, perfect enough for me and encik suami.
Ingredients:
70 grams of cake flour
45 grams of fine sugar
1-1/2 tbsp of vegetable oil
20 grams of butter
1/2 tsp of baking powder
1/2 tsp of vanilla extract
Pinch of salt
1 large egg at room temperature
1/4 cup of milk
1 tsp of yogurt
Directions:
1. Preheat oven to 180°C.
2. In a bowl, mix the flour, sugar, baking powder and salt.
3. Add in the butter and mix till the texture turns crumbly.
4. In another bowl, mix together the milk, oil, vanilla extract, yogurt and egg.
5. Add the wet ingredients into the dry ingredients and mix well.
6. Pour the batter into cupcake tin with liner and bake for 15-18 minutes.

Bahan-bahan:
70 gram tepung kek (saya letak 65g tepung gandum + 5g tepung jagung kemudian ayak 2 kali)
45 gram gula halus
1-1/2 sb minyak sayuran (saya guna minyak matahari)
20 gram mentega
1/2 sk serbuk penaik
1/2 sk esen vanila (saya letak 1-1/2 sk sebab nak extra rasa vanila)
Secubit garam
1 biji telur gred A (suhu bilik)
1/4 cawan susu (saya guna susu dutch lady low fat)
1 tsp yogurt
Cara-caranya:
1. Panaskan oven pada suhu 180°C.
2. Satukan tepung, gula, serbuk penaik dan garam.
3. Masukkan mentega dan gaul sampai adunan jadi macam serbuk roti.
4. Dalam bekas lain, satukan susu, minyak, esen vanila, yogurt dan telur. Kacau sebati.
5. Tuangkan adunan bahan basah ke dalam adunan bahan kering. Gaul sampai sebati.
6. Tuangkan adunan ke dalam bekas kek cawan dan bakar selama 15-18 minit.
My verdicts:
➤ The cupcakes were so yummy! The sweetness is just right, cake texture is moist and airy at the same time.
➤ Unfortunately, my cupcakes cracked. Could have been due to the oven temperature or I overmix the batter.
➤ The taste of the cupcakes can be enhanced by adding buttercream frosting. I make the frosting with softened butter, icing sugar, milk and vanilla extract.
* I frost the cake while they are still hot and the buttercream melted 😅 *

I was extra hardworking on Monday.
I made pancakes for breakfast and in the evening, I decided to bake banana cake.
Simply because I bought bananas during the weekend.
Is that a good reason to bake?

I got the recipe from facebook.
Here's the original recipe and my modified measurement ➨
Ingredients:
2 cups of all purpose flour
1 tsp of baking powder
1 tsp of baking soda
1 cup of fine sugar (3/4 cup of brown sugar)
3 pieces of ripe banana, mashed (6 pieces of lady finger banana)
1/2 cup of vegetable oil (3/4 cup of vegetable oil)
2 each of eggs
1 tsp of vanilla essence (1 tsp of banana essence)
Chocolate rice (optional)
Directions:
1. In a mixing bowl, combine flour, baking powder and baking soda. Sift.
2. In another bowl, whisk the eggs and sugar.
3. Add in the vanilla essence and mashed banana then whisk well. 4. Stir in the mixture of flour and mix till no more lumps is visible. Then add in the chocolate rice. 5. Pour the batter into a greased cake tin. 6. Bake at 180°C for 40 minutes or until a skewer comes out clean. ------------------------------------------------------- Bahan-bahan: 2 cawan tepung serbaguna (saya guna tepung gandum) 1 sk serbuk penaik 1 sk soda bikarbonat 1 cawan gula halus (saya letak 3/4 cawan gula perang) 3 biji pisang masak (saya guna 6 biji pisang emas) 1/2 cawan minyak masak (saya letak 3/4 cawan minyak matahari) 2 biji telur 1 sk esen vanila (saya letak esen pisang) Coklat urai (saya tambah) Cara-caranya: 1. Ayak bersama tepung gandum, serbuk penaik dan soda bikarbonat. 2. Dalam bekas lain, pukul telur dan gula sehingga kembang. 3. Masukkan esen pisang dan pisang yang telah dilecek dan gaul sebati. 4. Masukkan bahan ayak (tepung, serbuk penaik dan soda bikarbonat) dan gaul sebati. Akhir sekali, masukkan coklat urai. 5. Tuang adunan ke dalam acuan yang telah digriskan *is this a word?* hahahahahha 6. Bakar pada suhu 180°C selama 40 minit atau kek masak sepenuhnya. My verdicts: ► The cake is a bit dry to my liking. I was dying for a sip of water right after I swallowed the cake. *exaggeration* ► The batter was too thick. I rarely baking but the-once-in-a-while-experience-of-baking gets me the idea to compare the consistency of the batter. TOO THICK FOR A CAKE BATTER. I'm not sure if the batter is supposed to be that thick so due to my insecurity, I added more oil to the batter. The recipe says 1/2 cup of oil but I modified the measurement to 3/4 cup. ► Sweetness of the cake was just right. 👍 ► Subtle banana flavor. I was hoping for a nice strong banana taste but the cake did not come out the way I wanted it to be. 😞 ► Unfortunately, the cake was not light and fluffy. Probably my technique or the recipe itself needs further modification. I shall keep experimenting I guess. Guess what, it's 2017 yo!
It's been 2 years since my last post and all of sudden, I got excited to blog last night.
Simply because I wanted to record my culinary journey *this sounds quite professional ehh*
Well, I shall utilize my blog and keep the recipes that I have tried here.
At the very least, whenever I want to bake or cook the meal again someday, I can just open up my blog and search for the recipe. Hewhewhew~

So today I took a day off.
I have 3 days of replacement leave which are going to expire in this month and I decided to extend the weekend to avoid the monday blues.
Anddd, this 26-weeks-5-days pregnant lady is craving for McD's pancake.

I'm still living in the jungle, my workplace, so there is no way I can buy the pancake.
My last sort, I make the pancake on my own.

I have tried few recipes before and non came out like how I wanted them to be.
But this oneeee, is a must kept recipe.
Fluffy and so Mcd like.
Ingredients:
3/4 cup of milk
2 tbsp of white vinegar
2 tbsp melted butter
1 each of egg
1 cup of all purpose flour
1 tsp of baking powder
1/2 tsp of baking soda
1/2 tsp salt (if you're using salted butter, you may skip the salt)
2 tbsp of granulated sugar
1 tsp of vanilla essence (optional)
Directions:
1. Combine milk and white vinegar in a bowl and set aside.
2. In another mixing bowl, combine flour, baking powder, baking soda, salt and sugar.
3. Whisk in egg, vanilla essence and melted butter into the milk with vinegar.
4. Pour the wet ingredients into the mixture of flour and whisk until no more lumps.
5. Heat a large skillet or a non-stick frying pan over medium heat.
6. Pour 1/4 cupful of batter onto the skillet, and cook until the edges look dry and bubbles appear on the surface. Flip with a spatula, and cook the other side until golden brown.
7. DONE! Serve with maple syrup and butter yummy~

I managed to get 8 pieces of medium-sized pancakes.
And Mr. Husband said he likes these pancakes better than the one I made last week.

Bahan-bahan:
3/4 cawan susu (saya guna susu Dutch Lady low fat)
2 sb cuka (saya guna cuka makan)
2 sb mentega yang dicairkan (saya guna buttercup)
1 biji telur
1 cawan tepung serbaguna (saya guna tepung gandum)
1 sk serbuk penaik
1/2 sk soda bikarbonat
1/2 sk garam (letak kalau guna unsalted butter, since saya guna buttercup, saya tak letak)
2 sb gula
1 sk esen vanila
Cara-caranya:
1. Campurkan susu dengan cuka dan biarkan sebentar.
2. Dalam bekas lain, satukan semua bahan kering (tepung, serbuk penaik, soda bikarbonat, garam* dan gula). Saya ayak tepung, serbuk penaik dan soda bikarbonat sekali. Then baru tambah gula.
3. Dalam campuran susu dan cuka tadi, masukkan mentega cair, esen vanila dan telur. Pukul sampai sebati.
4. Tuangkan adunan basah ke dalam campuran bahan kering. Gaul sebati sampai tak ada ketulan. At this point, adunan tu tak terlampau cair. Consistency dia macam adunan cucur. Runny but not too runny. *macam mana nak explain ni hahahahahahah*
5. Panaskan kuali leper yang tak melekat, guna api kecil je. *frying pan la senang cerita*
6. Tuangkan satu senduk adunan ke dalam kuali. Biarkan sampai tepi pancake kering dan ada buih-buih kecil. Terbalikkan dan masak dalam 1 minit sampai kekuningan.
7. SIAP! Boleh dimakan bersama maple syrup dan mentega.
